Spinach, Onion and Goat Cheese Quesadillas

Last night, I got home from work and the gym around 8 p.m. - and I was famished. Knowing I had plenty of ingredients leftover from my Roasted Vegetable, Goat Cheese and Pesto Pizza, I decided to whip together a quick, satisfying meal: Spinach, Onion and Goat Cheese Quesadillas.


I had some leftover whole wheat tortillas in the freezer, and they came in very handy last night. I simply sauteed the onions in some olive oil until they were translucent (about 5-7 minutes), and then added the baby spinach. I cooked the onions and spinach together until the spinach was wilted, then seasoned everything with some salt, black pepper and red pepper flakes. I then added the veggies to the tortilla with some crumbled goat cheese, folded the tortilla in half, and cooked on the stove until it was brown and crispy. 

This may not be a traditional quesadilla, but at 8 o'clock at night after a good workout and a long day, it was the perfect meal.

  1. I made a great chicken sausage/gnocchi/cabbage stir fry the other night for dinner. It was delicious and took less than 15 minutes!
