Vegetarian Ventures: Chipotle Seitan Tacos

The first time Z mentioned seitan (pronounced "satan") I was skeptical. How could this wheat-based protein that's name resembles that of the devil be tasty? Eventually, however, I decided to give it a try, to develop my own opinion of it - and Cinco de Mayo was the day I caved.


And trust me when I tell you - I am so glad I did. Although seitan sounds scary - and looks even scarier - this is by far the best meat substitute I've had to date. The texture and taste is very "meaty."


We decided to use the seitan in tacos, in honor of the holiday, and I can honestly say this was the best vegetarian meal I've had since making the crossover. I know omnivores would love this dish - it's a great healthy alternative to chicken or beef for the occasional tacos!

Chipotle Seitan Tacos
Yields: About 8 tacos

For taco seasoning:
-1 teaspoon chili powder
-1/2 teaspoon cayenne pepper
-1 teaspoon garlic powder
-1 teaspoon light brown sugar
-1/4 teaspoon ground cumin
-1/4 teaspoon ground coriander
-Salt and black pepper, to taste
-1/4 cup lime juice

For the filling:-2 tbsp. olive oil
-1 large red onion, cut into strips
-1 small red pepper, cut into strips
-1 small yellow pepper, cut into strips
-8 oz.  seitan

Other:
-8 flour tortillas, warmed
-Guacamole for serving

Directions:
1.) In a small bowl, whisk together all ingredients for the taco seasoning and set aside. 


2.) In a saucepan, heat oil and add onions. Cook on medium heat until the onions are soft and caramelized, about 7 minutes. Then add pepper strips, seitan and mixed taco seasoning; saute for about 2 minutes.


3.) Serve with warm tortillas and guacamole.



Oh...my. The spicy, meaty seitan paired with the sweet onions and peppers was complete and utter tastebud heaven. I could have easily eaten all eight tacos myself.

  2. It would definitely make me a little skeptical too, but it looks like you ended up with a great meal. I've never tried it.

  6. I used the original recipe name from VeggieBelly.com, as noted - I didn't use chipotle seasoning in mine, but it still had the smoky, spicy flavor similar to chipotle, so I chose to keep the original name. Thanks!
