Jalapeno Peppadew Grilled Cheese

On Monday night, Z and I were in the mood to cook dinner, but it had to be a quick one as friends were coming over for the Celtics game. I had just purchased some Yancey's Fancy Jalapeno Peppadew cheese the day before, which I first tried at the Spring Wine Fest, so I suggested making grilled cheese. Z was immediately in like Flynn.


The jalapeno peppadew cheese is delicious and only slightly spicy, but believe me when I tell you....it's hard to cut into thin, grilled-cheese-worthy slices...


Despite the mess I made with the cheese, our grilled cheese sandwiches came out - dare I say - epic. Z caramelized some onions, and we added some of Trader Joe's roasted red peppers to the sandwich. The end result was perfectly crispy bread with ooey gooey cheese and sweet, slightly crunchy veggies in the middle. 


A great combination of flavors and textures, despite how unhealthy it was (but we paired it with an arugula salad, so we're good).


This ended up being the perfect quick and satisfying meal before having people over.

  2. If you don't have a cheese knife, a vegetable peeler is a great tool for getting those thin slices of cheese. Looks like a fabulous sandwich!

  3. LOVE grilled cheese. I had a great vegan grilled cheese from a food truck recently made with caramelized onions, daiya cheese, and pesto. YUM!
